Slice into 1/4" pieces of your preference - coins or strips
Place onto dehydrator trays
Dehydrate at 125°F / 52°C
Test for Dryness (should snap)
Condition
Store in an airtight container for a year or more

Alternative Treatments
Chicken Broth Dip
Try dipping your sweet potatoes into a concentrated chicken or beef broth. I used the Herb Ox Chicken Granules, but you can use any brand. I did about 1 cup of water to a packet of granules then dipped the potato slices into it.
Pre-cook
Roast or microwave sweet potatoes to the point of being barely fork-tender. You don't want them fully cooked.
Place in the fridge overnight (or at least for a few hours) to firm up
Slice into preferred slices.
Other
Sprinkle turmeric and black pepper onto dampened slices
Sprinkle chicken or beef broth granules onto dampened slices
Oven Instructions
Follow the above directions for preparing
Preheat to 200F.
Place on cookie sheets. You can line with baking paper if you are afraid of them sticking (but they shouldn't).
Bake for three hours then turn over.
Turn off the oven after six hours and allow the residual heat to dry out the sweet potato chips to your desired doneness.
