Allow bag of shredded potatoes to thaw for about five minutes (optional)

Spread shreds onto dehydrator trays lined with mesh, parchment/baking paper or fruit leather sheets.
Dry at 125°F/52°C for 3-6 hours
Test for dryness
Condition for 5-7 days. Meaning place into a jar, shake for 5 days or so to make sure potatoes aren't sticking together or getting soft (if so, throw them back into dehydrator).
Store in an airtight container for up to five years.
