    Blueberry Rice Krispies Treats

    Blueberry Rice Krispies Treats are an excellent way to learn to use your dehydrated fruit powders and take the typical rice cereal marshmallow treat up a notch! Use any fruit flavor to achieve your preference!

    I've been making Rice Krispies Treats since I was a kid with my mom as a special treat.

    They hold such a spcial place in my heart not only because it is a touchstone with my Mom, but also because they taste so darned good!

    But, as with everything I do, I had to find a way to use my dehydrated fruit powders, and this seemed the perfect match of fruit flavor + rice + marshmallow to make a very special treat.

    Today I'm showing you how to do these with blueberries, but any fruit powder will do.

    So let's get started!

    How to Make Blueberry Rice Krispies Treats

    These delicious blueberry cereal treats take about ten minutes to prepare and last for about three days in airtight storage.

    Tools Needed:

    • Stockpot or dutch oven
    • Silicone spatula
    • 8x8 or 9x9 baking dish

    Ingredients:

    • 5 ¾ C Rice Krispies cereal (or any brand)
    • 10 oz mini marshmallows
    • 4 TB unsalted butter
    • ¼ Cup dehydrated blueberry powder

    Directions:

    1. Melt butter on low in stockpot or dutch oven
    2. Add blueberry powder and mix until incorporated
    3. Add mini marshmallows and stir frequently
    4. Add rice cereal and mix
    5. Pour into 8x8 baking dish
    6. Allow to rest 30 minutes before cutting
    7. Store in an airtight container for about three days

    Microwave directions:

    In a microwave-safe bowl

    1. Heat the butter and marshmallows on high for 3 minutes, stirring after 2 minutes.
    2. Add powder and stir until smooth.
    3. Continue to follow steps 4-7.

    Notes:

    While the recipe calls for ¼ C of dehydrated fruit powder, you can add up to ⅓ cup. The color doesn't change drastically, and the flavor is mild as stated by the recipe because it can be overwhelming sweet with more.

    If you do not own a dehydrator or don't have dehydrated blueberries, you can use freeze-dried blueberries and grind them into a powder, instead.

    Alternatively, allow the rice mix to cool a bit and roll into golfball-sized balls. They'll need to be stored quickly as they can get hard fast.

    Tips for Making Rice Krispies Treats

    Use FRESH marshmallows for best results.

    Those marshmallows that have been in your pantry for a year should be relegated to making dehydrated marshmallows, instead (or they might already be!)

    Don't overwork your marshmallow creme

    Just like overworking a muffin batter, it can make the end product tough. Mix until just incorporated, remove from eat, and start the next step.

    Thick layers are better

    When pressing into your dish, be gentle, and don't make your layer too thin. A thicker layer gives chewier, softer treats.

    Store in an airtight container

    A freezer bag, wrapped in plastic, in a covered dish, or other airtight containment is necessary to keep your treats soft, especially the treat balls. Exposure to air dries them out quickly.

    Questions about Making Rice Krispies Treats

    Can these be frozen?

    Yes! They can. Wrap individual pieces in wax paper inside of an airtight container (double freezer bags, vacuum seal bags, airtight freezer containers). Store for up to two months, allowing them to sit at room temperature for 15-20 minutes before serving.

    However, these don't bring the best texture, and your results may vary. It's best to eat them ASAP and just make more!

    How long do Rice Krispie Treats Last?

    Up to three days if stored in an airtight container or well wrapped.

    What if my Rice Krispies treats are too hard?

    You can try putting them in a microwave for 15-second intervals to warm the marshmallow up some.

    What other fruits can I use?

    Any fruit you love! Try these:

    • Raspberries
    • Apple cinnamon
    • Blackberry

    Take Rice Krispies Treats up a notch with these fruit-flavored marshmallow treats. Use any dehydrated fruit powder that you prefer and have these treats ready in a jiffy!

    Equipment

    • Heavy duty pot or dutch oven
    • Silicone spatula
    • 8x8 baking dish

    Ingredients

    • 5 ¾ Cups Rice Krispies Cereal generic is fine
    • 10 oz mini marshmallows
    • 4 TB unsalted butter You can use 5 TB if you'd like
    • ¼ C Blueberry Powder use any fruit powder of your choice

    Instructions

    • Melt butter on low.
    • Add blueberry powder and mix until incorporated
    • Add mini marshmallows and stir frequently
    • Add rice cereal and combine
    • Pour into 8x8 baking dish and press into place
    • Allow to rest 30 minutes before cutting
    • Store in an airtight container for about three days

    Nutritional information is an estimation only. Nutrient information for dehydrated foods is based on fresh. Use ¼ of the servicing size for the same nutrient information. Thus 1 Cup of fresh fruit has the same sugars as ¼ dried.
